In Northeast Texas
Northeast Texas is a diverse agricultural based community. With over forty five inches of rain per year, grass grows thick and lush. Great grass grows great animals. Sheep and pasture share a symbiotic relationship, my dream with this ranch was to provide for both our needs and provide tex-quisite lamb.
Providing Delicious Lamb locally
Did you know that most lamb is not American lamb? There are very few protections for the consumer in the general marketplace. The USDA defines lamb as a sheep less than a year old, however this is not always what is seen in the marketplace. American Lamb is not gamey, but rather has a sweet rich flavor and tender texture. Had lamb and didn’t like it? Chances are it was low quality imported mutton (meat from old sheep).
